Saucy Chicken Casserole

3 chicken breasts,whole,cubed
2 tablespoon onion,instant minced
1/2 cup dairy sour cream
1/2 cup water chestnuts,sliced
1 cup potato chips,crushed
1 cup rice,uncooked
1 can cream/mushroom soup(10.75oz)
1 can mushroom stems/pieces(4oz)
1 can peas,drained(17oz)
1. Blend together chicken, rice, onion and soup in a large bowl. 2. Gently fold in sour cream, mushrooms, water chestnuts and peas. 3. Spread mixture in a greased 8-inch-square casserole; cover and bake in preheated 350'F. oven 30 minutes. 4. Sprinkle potato chips over top; bake, uncovered, 10 minutes longer.
