Crunchy Chicken Nuggets

1/3 cup plus 2 tsp. unsweetened
1 wheat germ
1 teaspoon paprika
1/2 teaspoon coarsely ground black pepper
1/4 teaspoon salt
15 oz skinless boneless chicken
1 breasts, cut into bite-sizes
2 teaspoon vegetable oil
In gallon-size sealable plastic bag, combine wheat germ, paprika, pepper and salt; seal bag and shake to blend. Add 3-4 chicken pieces; do not crown bag. Seal bag and shake to coat. Place coated chicken pieces on large plate; repeat, using remaining chicken pieces.
In large nonstick skillet, heat oil; add coated chicken pieces. Cook, turning as needed, 10-12 minutes, until golden brown on all sides and cooked through.
EACH SERVING PROVIDES: 1/2 fat; 3 proteins; 1/2 bread
