Penne With Chicken Alla Vodka

1 tablespoon olive oil
2 garlic cloves -- chopped
1 small onion -- chopped
1/4 cup chopped proscuitto
1 or fully cooked virginia
1 ham
2 skinless, boneless chix
1 breast halves
1 cut into 1/2 pieces
1/2 cup vodka
1/2 cup heavy cream
1/2 cup sliced imported italian
1 black olives
1 tablespoon chopped fresh parsley
1/2 teaspoon pepper
16 oz penne
2 tablespoon freshley grated parmesan
HEAT BUTTER AND OIL IN 10" SKILLET OVER MED HIGH HEAT. SAUTE GARLIC AND ONION IN BUTTER MIXTURE. STIR IN PROSCUITTO AND CHICKEN. COOK, STIRRING OCCASIONALLY, UNTIL CHIX IS BROWN. STIR IN VODKA. TURN UP THE HEAT UNTIL REALLY HOT. CAREFULLY IGNITE. STIR IN HEAVY CREAM, OLIVES, PARSLEY AND PEPPER WHEN FLAME DIES OUT. COVER WITH LID TO EXTINGUISH FLAME. SIMMER UNCOVERED 30 MIN., STIRRING FREQUENTLY UNTIL THICK. COOK PENNE AS DIRECTED ON PKG. MIX PENNE WITH CREAM MIXTURE; TOP WITH CHEESE. VIOLA! CIAO BAB
