Sicilian Chicken

4 medium chicken breast halves without skin; boned
nonstick spray coating
1/2 cup ricotta cheese, part skim milk
1 tablespoon parmesan cheese
1/4 cup mozzarella cheese substitute; shredded
1/2 package spinach; thawed, drained
1 cup spaghetti sauce, nonfat

Rinse chicken; pat dry with paper towels. Spray a 2 quart rectangular baking dish with nonstick coating. Place chicken pieces in dish. Spread 2 T. of the ricotta cheese on each chicken breast half. Sprinkle each breast half with parmesan cheese and mozzarella cheese. Spoon spinach evenly onto each breast half. Cover dish tightly with foil. Bake in a 350° oven 20 to 25 minutes or until chicken is tender and no longer pink. Meanwhile, in a small saucepan, heat spaghetti sauce. Spoon 2 T. spaghetti sauce on each of four plates. Place chicken on the plates; top with remaining sauce.
