Grilled Chicken With Pineapple Salsa

4 chicken breast halves; skinless
salt and fresh ground pepper
1/2 medium red bell pepper
1 cup crushed pineapple in juice -
1 cup fresh pineapple cubes
1/2 cup green onion; thinly sliced
1 tablespoon
2 tablespoons chopped fresh cilantro or
2 tablespoons chopped fresh parsley plus -
1. Light a medium-hot fire in a BBQ grill. Pound the chicken breasts slight
2. In a medium bowl, stir together the pineapple with its juice, / cup slice
3. On an oiled grill rack, grill the chicken a total of about 8 minutes, t
4. Serve the chicken topped with a generous spoonful of pineapple salsa.
5. Garnish with the remaining green onion slices and sprigs of cilantro.
